Some Helpful Hints
- Never be afraid to
experiment. Buy what is freshest or in season. If
crabs are scarce substitute with bugs, prawns or scallops
to add flavour to your meals
- Always purchase good
quality seafood
- Don't overcook your
fish, it can become dry or even tough
- Some thick fillets,
like Red Emperor, need to be sliced into pieces of
equal depth to cook evenly
- Don't ever leave
your seafood in the car when going shopping. If you
won't be home for a while please tell us and we can
wrap it more appropriately
- Always take your
fresh seafood out of the packaging before storing
in the refrigerator at home to prevent deterioration.
The wrapping is meant as insulation only and will
keep the cold out
- If you are unsure
of how to thaw or handle any product, please ask us
- Seafood makes a great
gift, and we also arrange platters for functions,
raffles and gifts
